Two of my favorite things are strawberries, and the month of June. I wait alllllllll year long for this amazing weather, and this amazing berry to show up at my doorstep. You're not gonna find me any other month of the year stocking up on Driscoll's strawberries. No way. Not me. I'm a strawberry purist. Simply because I know that they are at their peak when they're in season. They will never taste better in any other month than they do right now, right here, this month. So I love to stock up on them in June and try out as many new recipes as I can and you're going to love me for this one because in a word, it's awesome! Plus, it's so simple you can knock this out in no time on a Sunday morning while your coffee is brewing. For reals.
Here's what you do:
Chop up 2 cups worth of strawberries and place them in a pot on the stove over medium heat. Pay attention to them and start mashing them up a bit with a wooden spoon so you break up the fruit and let the sweetness flow! Keep it over the flame for about 8-10 minutes, until they're a little soupy and mashed to your liking. Then remove from the heat and stir in 1 Tbs brown rice syrup... and if you're plum outta that, you can go for the coconut palm sugar... outta that, then go ahead and use the raw turbinado sugar, or the stevia, or the maple syrup, or the raw honey (see, so many options!) I'd also add in 1 Tbs freshly squeezed lemon juice for a touch of flavor and as a natural preservative... it'll help to keep that gorgeous red color staying vibrant, and limit the growth of bacteria.
Next, you're going to add in 2 Tbs chia seeds and mix them in fully. Then, let it sit. The chia seeds are going to get busy absorbing some of the strawberry juice, helping to create a jammy consistency. Plus, they're going to offer up some omega-3's, antioxidants, and fiber... not bad for a tiny seed.
Now, once you're happy with the consistency (you can add in a few more chia seeds if you're thinking you'd like your spread to be a little thicker, but take it 1 tsp at a time), you can spread it on anything, add it to anything, or simply spoon it right into your mouth. Enjoy!
