Snacks! Who doesn't love snacks?! Everyday we're looking for something small to take the edge off, to enjoy, to satiate some little crave we may have going on at the moment. And I'm not sure about you, but I'm an equal opportunist when it comes to snacking. It can be sweet, it can be salty and crunchy, it can be savory... whatever it is, I'm sure to like it! Keeping it healthy is the tricky part!
I know you feel me, so that's why this recipe is a must to have on hand when you know you want to snack on something, but you want it to provide with something more than empty calories. Chickpeas are a great snack (and I'm not talking hummus here - but that's good too!) and they're quite versatile, so even though this recipe is savory, and spicy, you can switch it up and sweeten them with a little maple syrup, or brown rice syrup and roast 'em that way. Any which way you do it, these are awesome to have on hand, so give them a go and be a smart, savvy snacker!
Roasted Spicy Chickpeas
1 (15 oz.) can chickpeas, drained and rinsed
1 Tbs olive oil
1 tsp smoked paprika
Pinch of salt to taste
Preheat oven to 350F. Drain, rinse and blot the chickpeas dry with a paper towel. Pour the chickpeas into a bowl, and stir in all of the other ingredients until evenly coated. Place on a baking sheet lined with parchment paper and roast for 40-50 minutes, stirring the chickpeas every 10-15 minutes. The chickpeas should be dry and crisp on the outside, slightly chewy on the inside.
