Summer and soup. Not exactly the same as peas and carrots, but this combo is totally perfect when you're talking gazpacho! Crisp, refreshing, and cool, this soup is perfect for summer and any entertaining you may be doing. Add in the sesame and chia crisps and you'll have to hand out recipe cards to all your guests!
Here's what you'll need, and how to do it:
7 - 10 tomatoes, cored and coarsely chopped
1 cucumber, peeled, seeded and coarsely chopped
2 red bell peppers, coarsely chopped
1 jalapeño, seeded and coarsely chopped
1/4 cup red wine vinegar
1/3 cup extra-virgin olive oil
Salt and freshly ground pepper
Combine all of the ingredients in a large bowl and refrigerate for a couple hours, or overnight if you've got the time!
In your super-duper blender, puree the vegetables until smooth. You can then strain it if you'd like, or eat it with all the good fiber. Season with salt and pepper, and serve with your sesame and chia crisps (recipe below).
Sesame & Chia Crisps
¼ cup chia seeds
¼ cup sesame seeds
½ tsp sea salt
¼ cup oats
2 Tbs flax seeds
1 cups filtered water
¼ cup gluten free all-purpose flour (I used Trader Joe's)
2 Tbs extra virgin olive oil
Preheat oven to 325F. Combine all ingredients in a bowl and mix well. Let the mixture sit for a bit, maybe 20 - 30 min, so the chia seeds can swell up so you have a thick kind of doughy consistency.
Next, spread the dough out on a piece of non-stick parchment paper and place a second piece of parchment paper on top. Then roll out the dough using a roller, getting the dough as thin as possible. When the dough is rolled thin, remove the top piece of parchment paper carefully and cut the dough into small squares using a knife. Take is slow here, the dough may be a little tricky.
Next, place baking sheet with dough on the parchment paper in the oven and bake for 30 to 40 minutes until golden brown and crisp.
Let them cool for 5 mins before breaking them up into small squares.
